Seafood Smoking Technical Training Guide

The project to develop a printed technical guide in seafood smoking was transformed into something much more exciting, an eLearning package on the theory of smoking fish and shellfish. 2010 proved to be an exciting year for smoking training, as we saw:

  • The launch of the smoking eLearning package in July 2010;
  • The launch of smoking units for the Improve Vocational Qualification in fish and shellfish in October 2010;
  • The purchase by the Seafood Training Academy of a state-of-the-art AFOS mini kiln in November 2010, and;
  • In December 2010 the completion a nationally recognised off-the-job nationally recognised training qualification - an VRQ in smoking fish and shellfish, as well as the launch of the practical Advanced Smoking course at HSI in Grimsby.


Other Technical Training Guides and Authors

Seafish plans to develop Technical Training Guides in high care operations, coating seafood, freezing and thawing of seafood were put on hold due to the lack of suitable authoring teams and the poor performance of the authors commissioned to develop the coatings technical guide.

We would like to hear from potential authors of these guides, from seafood companies that are interested in helping to develop them, and from academic institutions that have an interest in these topics.
